A good illustration of this is to compare a raw carrot to a glass of carrot juice. You must chew the carrot well as it contains a lot of fibre, and it is this fibre that slows down the way the carrot is digested. This slow conversion time ensures that the levels of glucose in the body rise gently. However, in a juice form, the fibre is effectively removed, and is broken down much more quickly, so carrot juice is a simple carbohydrate.
So, to conclude, always opt for foods which take longer to digest, as these will reduce hunger pangs and cravings, which are the downfall of most dieters.
